Chicken noodle vegetable soup

Chicken, vegetable and noodle soup recipe with Melt butter in large saucepan over medium-high heat.

Ingredients

  • Boiled noodle: 60 gms Chilli oil: 1 tbsp Chopped spring onion: 2 Shredded boiled chicken: 1 cup Sliced carrot: 1 small Sliced bean:4 Sliced capsicum: 1/4 medium Cabbage pieces: as desired
  • Chicken stock: 4 cups Sherry 2 tbsps Light soya sauce: 1 tbsp Salt: to taste Pepper powder: 1/2 tsp Cornflour: 1 1/2 tsp

Method

Step 1

Heat the chicken stock. In a saucepan heat the chilli oil. Fry the spring onion for a few seconds and add the chicken. Add all the vegetables one by one. Stir for awhile and add the hot stock. Bring to boil and upon medium heat cook for about 5 minutes.

Step 2

Mix the cornflour with a little water and add to the soup. Stir continuously so that no lump is formed. Add salt and boil for awhile till done. Add the sherry, soya sauce and pepper. Divide the boiled noodles in 4 soup bowls and also divide the soup. Garnish with coriander leaves and serve.
