Ingredients
- Chicken wings: 12 Koldil (banana flower): 1(small) Salt: 1 level tsp Turmeric powder: ½ tsp Mustard oil: 5 tbsps Bay leaves: 2
- Broken dry red chillies: 2 Finely chopped onion: 2 medium sized Cumin seed powder: 1 level tsp Coriander seed powder: 1 level tsp Cinnamon (crushed): 1 inch stick
- Cardamoms (crushed): 4 Pure ghee: 1 tbsp Salt: to taste
Method
Step 1
Wash the chicken wings and drain. Remove the outer layers of the koldil till you get the soft whitish layers. Take water in a large bowl. Rub mustard oil well to the hands before cutting the banana core. Add salt and turmeric powder to the water and chop the core of the koldil very finely.
Step 2
Remove threads while chopping. Mash with finger tips the finely chopped koldil. Squeeze. Heat mustard oil in a karahi. Add bay leaves and broken dry chillies. When the bay leaves change colour add onion. Stir fry the onions upon medium heat. When the onions are lightly brown add the chicken wings.
Step 3
Sprinkle turmeric powder, cumin powder and coriander powder. Stir fry for five minutes. Add the banana flower and sprinkle salt. Stir for about a minute. Reduce heat to minimum and cover. Stir oMethodasionally. When almost done add crushed cinnamon and cardamom. Add pure ghee and upon moderate heat stir for a minute. Cover and reduce heat to minimum. Keep covered for half a minute. Remove the Kukurar Deukar Logot Koldil Bhaji from fire. Serve hot.
