Ingredients
- Tender jackfruit(cubed): 400 gms Potato( boiled and quartered): 2 medium sized Tomato pieces: 2 medium Slit green chillies:2 Grated onion: 2 medium
- Ginger paste: 1 tsp Garlic paste: 1 tsp Mustard oil: 5 tbsps Bay leaves:2 Dry chilli: 2
- Coriander powder:1 tsp Fennel powder: 1 tsp Cinnamon: 1 inch long Cardamom: 4 Clove: 2 Salt and turmeric powder: as required Sugar: 1 level tsp Pure ghee: 1 tsp
Method
Step 1
Boil the jackfruit pieces and drain. Heat 2 tbsps of mustard oil add the jackfruit pieces. Stir fry for awhile and drain. Heat another tablespoon of oil and fry the potatoes and switch off the gas. In another karai heat the remaining mustard oil. Fry the bay leaves and dry chillies.
Step 2
When it changes colour add the grated onion. Also add the ginger and garlic paste. When oil floats to the top add the tomato pieces and upon medium heat cook till the tomatoes are soft. Add the coriander powder, turmeric powder and fennel powder. Stir for a few seconds and add the jackfruit pieces. Stir for awhile and add salt.Cook covered for a minute.
Step 3
Open cover and stir.Add sugar. Add the potato pieces and hot water. Cover and upon medium heat cook till done. Warm and grind the cardamom, cinnamon and cloves. Sprinkle it and add the pure ghee. Stir and cover.Switch off the gas. Open cover after 2 minutes and serve.
