Brinjal Bhaji

Brinjal bhaji is a simple vegetable stir fry with Assamese spices.

Ingredients

  • Brinjal: 250 gms Onion: 1 medium Ginger: 1 inch long Mustard oil: for frying the brinjal pieces Mustard oil: 2 tbsps (for the bhaji) Dry chillies: 2 Hing: a pinch Paanch-phuron: ½ level tsp
  • Coriander powder: 1 tsp Clove powder: a pinch Tomato sauce: 1 tbsps Mustard sauce: 1 tbsp Vinegar: 2 tsps
  • Chilli sauce: 1 tsp Sugar: 1 tsp Salt: to taste For garnishing: mustard oil: 1 tbsp

Method

Step 1

Wash the brinjal and make large pieces. Soak in salted water for about 5 minutes and drain well of water. Peel the onion and ginger and wash. Cut the onion and make a paste.

Step 2

Grate the ginger. Heat oil in a small karai. Fry the brinjal till half done in batches and drain in paper napkin. Heat 2 tbsps of oil in another karai. Temper with dry chillies, paanch-phuron and hing.

Step 3

Add the onion paste, sugar and turmeric powder. Upon medium heat fry the paste till brown. Sprinkle the coriander powder and add the half fried brinjal. Sprinkle salt and stir. Cover. Cook covered stirring twice for about 2 minutes. In a small bowl mix the tomato sauce, vinegar, chilli sauce and mustard sauce.

Step 4

Also add the powdered cloves to the mixture. Add about ¼ cup of warm water to the mixture. Uncover the bhaji and add the sauce mixture. Stir well and cook covered till done. Sprinkle the grated ginger and mustard oil. Stir. Switch off the gas and keep covered for 2 minutes. Garnish and serve with lucci.
